Variety / Strain : Saccharomyces cerevisiae
Yeast IOC B 2000 is particularly suited to the vinification of white wine. It helps in the production of desirable aromatic compounds and can also be used for barrel fermented wines.
This yeast is recommended for the grape varieties Gewurztraminer, Sauvignon and Semillon.
The strain produces high quality wines, preserving both the grape variety and terroir.
- High alcohol conversion, 16.5 g of sugar produces 1% of alcohol
- Low production of volatile acid
- High resistance to alcohol (over 14% vol)
- Good production of glycerol (6g/L)
- Very low production of sulphur dioxide
- Very low foam formation
- Controlled, regular fermentation across the range 10 to 30 degrees C
- Viable yeast > 15 million cells/g
- Purity – less than 10 wild yeast per million cells
